Ingredienti

Fermentabili:

• 4 kg malto Maris Otter (6 EBC, 80%)
• 500 g malto Vienna (8EBC, 10%)
• 400 g malto Crystal (150EBC, 8%)
• 100 g malto Biscuit (50EBC, 2%)

Luppoli:

• 50g East Kent Goldings (AA 5%) a 60′
• 40g East Kent Goldings (AA 5%) a 15′
• 40g East Kent Goldings (AA 5%) a 5′

Lievito:

• 2 bustine(11,5g) di Fermentis SafAle S-04

Acqua:

• Profilo bitter

Indicazioni:

1. Mash step a 65°C per 60 minuti
2. Mash-out a 78°C per 15 minuti
3. Fly sparge con acqua a 78°C
4. 60′ Bollitura
5. Raffreddare a 25°C e inoculare il lievito

Fermentazione:

1. Fermentazione a 16°C per 3 giorni
2. Fermentazione a 18°C per 9 giorni
3. Fermentazione a 20°C per 2 giorni
4. Cold Crash 3 giorni
