Ingredients

Fermentables:

  • 4 kg Maris Otter malt (6 EBC, 80%)
  • 500 g Vienna malt (8EBC, 10%)
  • 400 g Crystal malt (150EBC, 8%)
  • 100 g Biscuit malt (50EBC, 2%)

Hops:

  • 50g East Kent Goldings hops (AA 5%) at 60′
  • 40g East Kent Goldings hops (AA 5%) at 15′
  • 40g East Kent Goldings hops (AA 5%) at 5′

Yeast:

  • 2 packages (11,5g) of Fermentis SafAle S-04

Water:

  • Standard bitter water profile

Brew Directions:

  1. Mash step at 65°C for 60 minutes
  2. Mash-out at 78°C for 10 minutes
  3. Fly sparge with hot water at 78°C
  4. 60′ Boil
  5. Chill wort to 25°C and add yeast

Fermentation:

  1. Fermentation at 16°C for 3 days
  2. Fermentation at 18°C for 9 days
  3. Fermentation at 20°C for 2 days
  4. Cold Crash 3 days
